Do you live here? Or do you want to dance Salsa during your holidays?

I think that it Salsa dancing is not among the most important things you would look for in Crete - although I agree with you that it is fantastic! - so it will probably be a total coincidence if somebody would happen to know anything about it taking place in the area where you are going.
But you might consider spending your holidays learning some Greek dances - I assure you they are just as funny!

Get some Raki down you and give Greek dancing a go - so much more fun!

there used to be a Mexican restaurant in Gouves owned by a woman from Mexico, if I am not wrong, and people could dance all kinds of latin dances. If the restaurant is still open, then it sounds like the right place for you.
I don't know the name but I don't think it will be difficult to find it, if you ask in Gouves.

i have found a place to dance salsa! if you go to Bali beach, near Agia Pelagia, there is a bar in front of the sea where you fing salsa, bachata and rumba de casino music!
